Graham Cracker Bruschetta

I had to share a family favorite and was thrilled when I saw it on Picky Palate's blog all souped up style. If you don't have cream cheese try frosting. Recipes and pictures are from Pickpalate.blogspot.com it is a great blog for practical recipes to try at home. I'm sure Graham Cracker Bruschetta will be a fave at your house.
Nutty Raspberries and Cream

Graham crackers cut in half
4 oz softened cream cheese
2 Tablespoons sugarfresh raspberriescrushed walnuts

1. Place graham crackers onto a serving plate. Combine cream cheese and sugar in a bowl until combined. Spread onto graham crackers and top with fruit and nuts.

Peanut Butter, Banana's And Cream
Graham crackers cut in half
4 oz softened cream cheese
2 Tablespoons sugar
2 Tablespoons peanut buttersliced bananashoneycrushed walnuts

1. Place graham crackers onto a serving plate. Combine cream cheese, sugar and peanut butter in a bowl until combined. Spread onto graham crackers and top with bananas, drizzle with honey and top with crushed walnuts.
Cookies And Cream
Graham crackers cut in half
4 oz softened cream cheese
2 Tablespoons sugar Oreo cookies

1. Mix broken pieces of Oreo cookies in cream cheese mixture and spread over graham crackers. Enjoy!

Here are a couple good recipes....

POTATO CREAM CHEESE SOUP
This is like the soup from Wildflower Bread CO. It is so good!

1/2 cup chopped onions
1/4 cup very finely diced celery
2 tbsp. butter
2 tbsp. flour
3 cups shredded potatoes
3 cups low salt chicken broth
1/2 cup sour cream
4 oz. cream cheese
2 Tbsp. cooked and crumbled bacon or very finely diced ham
1/2 tsp dill weed
Salt
Pepper

In small saucepan sauté onions and celery in butter until tender. Add flour; stir and cook over medium heat 1 minute. Set aside.

In 3 quart pan combine broth and potatoes. Bring to a boil. Reduce heat. Cook until potatoes are tender, but not mushy. Stir occasionally so potatoes don't stick.

While potatoes are cooking, melt cream cheese with sour cream in microwave. Add cream cheese mixture to potatoes and broth mixture along with onion and celery. Add dill and bacon. Simmer and stir until creamy. Add salt and Pepper to taste. Thin with milk if necessary.

Serves 5 to 6. Top with sprinkling paprika. Enjoy!


really good meatballs

1 bag of frozen fully-cooked meatballs
1 jar grape jelly
1 bottle of chili sauce.

I usually combine jelly and chili sauce then pout over frozen meatballs in the crock pot. Stir occasionally. Cook until heated through. Enjoy!

My Favorite Meal!

I just wanted to share a delicious and easy recipe! It has been on my "Favorite Meals" list ever since my Grandma Smith introduced it to our family many years ago. So give it a try it just might make it on your "Favorite Meals" list too!

Opulent Chicken

6-8 chicken breasts, cut in half, boned and skinned (chicken tenderloins work well too!)
Lay in a 9X13 baking dish and put a slice of swiss cheese on each breast.

Mix together 2 cans cream of chicken soup, 1/2 cup sour cream and 1/2 cup water. Pour over chicken breasts. Mix 2 cups Ritz cracker crumbs (about 1 1/2 packages) and 1/2 cup melted butter and sprinkle over top.

Bake at 275 degrees for 2 1/2 hours. Serve with a side dish of steamed rice. (The gravy part of the dish we pour over the rice.)
